Il Fornaio was established by Sebastiano Varchione in 1984. Our first bakery was situated under the famous brick arches at Kings Cross, where with his wife Angela and her brother Giuseppe Schettino (Uncle Joe), il Fornaio began baking. Time honoured artisan recipes were used with Sebastiano and Uncle Joe incorporating their traditional know how to produce il Fornaio's fine breads. We thrived in Kings Cross for 16 years, developing and improving our range of breads and steadily grew our customer base. As our client list expanded a more current approach was needed, larger premises and modern equipment became a necessity, we also outgrew the existing building and needed more space. |

During the year 2000 Sebastiano Varchione, founder of our bakery sadly passed away. Everyone was devastated and only the strength of Angela Varchione and Uncle Joe, kept us going. Angela decided that the best thing to do was to honour Sebastiano's wishes to continue the business and with the help of Uncle Joe, the 3 girls and all the il Fornaio family, the biggest step in our history was taken, our big move! The extra space enabled us to step up our production volumes. The area’s great transport links gave us the freedom to supply anywhere in the country and with our own fleet of vehicles we ensured delivery deadlines. Today we are still a very close knit family unit with a great support team. Angela Varchione is at the helm with her daughters Giulia, Anna and Sandra all directors in the business. Uncle Joe keeps a close eye on the bakery and without his great experience and know how we would not be here today. |
