Ciabatta Range

Ciabatta is an Italian white bread, and can be found in nearly every province of Italy with slight variations from region to region. The literal translation of the word is ‘slipper’ due to its shape.

At IL FORNAIO our Ciabatta and Panini’s are one of our most prestigious products, naturally only the finest ingredients contribute to Sebastiano and Giuseppe’s tried and tested authentic family recipe.

After a 24-hour process of fermentation where the distinct Italian flavour of the olive oil infuses with the fermenting yeast and wheat of the mixture.

The next step is the complex yet simple stage of rising or proving, allowing the formation of gas bubbles to be trapped within the matrix of the dough.

After being placed on their own cloth bed setters to prove the final stage is to stone bake the Ciabatta dough, providing the Ciabatta with the characteristics of a light open crumb structure with a thin and crispy crust.

Focaccia Range

Focaccia belongs to the northern shores of the Mediterranean and has its origins within antiquity. Focaccia is essentially an Italian flatbread made with yeast and olive oil. The name focaccia derives from the Latin words Panis Focacius. Panis simply meaning bread and Focacius meaning centre of fire place.

IL FORNAIO’s Focaccia is produced using a similar method to that for Ciabatta, blending the finest ingredients into our authentic family recipe.

After the kneading process and resting allowing the dough to rise, one of our master bakers hand crafts the aerated dough providing the traditional dimpled visual aspect everyone knows and loves.

Following the baking process our Focaccia breads are then bathed in extra virgin olive oil providing an improved quality of the finished product with a golden outer crumb.

Our Focaccia’s can be hand crafted to provide a more traditional style, or pinned and cut by machine to maintain a more uniform appearance.

Sub roll sandwiches are known around the world in a variety of different names.

Originally, Sub roll sandwiches were only made with Italian cheeses and herbs.

Today the term is used to define a sandwich bread made plain or with a variety of inclusions and flavours.

Brioche is an enriched bread and is considered a Viennoiserie, with its origins found in French antiquity.

IL FORNAIO’s Brioche breads are diverse and delicious featuring a rich and tender crumb. Our signature dark golden crust is accentuated by a vegan glaze applied after proving to provide its final appearance.
